After building Australia's premier privately owned, NATA-accredited DNA parentage testing laboratory, the founder of Identilab, Kate, had reached a critical point. The Challenge

As Kivotos Wine and Kouzina expanded beyond its original venue into a second location, founders George and Anita faced a challenge common to many growing businesses: how to preserve the culture, values and guest experience that had made the business successful in the first place.

Built on authentic Greek hospitality, personal connection and genuine care for guests, Kivotos had developed a strong reputation and loyal customer following. The founders recognised that future growth would depend not only on operational capability, but on their ability to intentionally preserve and scale the culture that set the business apart.

The Gallodium Approach

Gallodium facilitated a strategic culture and values workshop with the founders, exploring the origin story, purpose, hospitality philosophy and leadership principles that underpin the Kivotos brand.

Together, we identified the values, behaviours and guest experience standards that define Kivotos, examined the cultural challenges associated with growth and delegation, and began developing practical strategies to embed culture more intentionally across multiple locations and larger teams.
